Over a month!!!
I have been on the vegan, no fish, no chicken, no gluten.....for over a month and feel really good. I know it's working because when I went off the diet and ate Chinese food (bad) I felt really AWFUL!
I've spent a fortune buying new food....pretty much starting over! I also know what stores carry the food I need!
I started with our local health food store, Morning Glory where they were very helpful. I learned that there are substitutes for EVERYTHING!! They have a non-dairy section.
I make on meal or partial meal out of a concoction of Boathouse Green Goodness and Organic Raw Kombucha. You can get it at Walmart....I do 2/3 Green Goodness and 1/3 Kombucha...really tasty (once you get over the color!) It reminds me of the Winogradsky Columns I had my Astrobiology students build and study over the course of the school year!) :)
I have now been to most stores in town AND, of course Trader Joe's and Whole Foods in Portland.
Probably the best selection is Wal Mart. The store is organized with a GREAT section (freezer) of everthing from gluten free bread, etc. and frozen Amy's products (Teriyaki Tofu bowl and Bean & Rice burritos are my favorites) and a great selection of "meatless" everything! The meatless meatballs are awesome! I got fishless fish filet's to make fish tacos.
I made a spagetti and non meat meatballs (from Walmart) in meatless marinara (Prego) and added a carton of sliced mushrooms and a cut up summer squash with gluten free spagetti (from pasta aisle - Walmart!) The whole family loved it!
They also have gluten free cornbread, cakes, etc in the flour aisle. If you need to use artificial sweetener, the healthiest way to go is stevia (Truvia)
For non-dairy, there is non-dairy ice cream, cottage cheese and milk (Lactaid). It tastes awesome. for non-dairy sour cream go to Trader Joe's (and Morning Glory).
For every type of flour etc. go to Reny's! They have nearly a full aisle of flours!
Hannaford is great, too. In the last aisle to the left as you enter the store, they have a selection of Amy's dinners. Everything else you have to kind of hunt for. The gluten free items are to the right of the bakery in a case. They have gluten-free oatmeal in the hot cereal aisle.
I haven't tried Shaws yet, but plan to check it out next week.
My favorite recipe website is allrecipes.com You can search by foods you have in the house and/or search parameters of "vegan, dairy-free, gluten-free" and find recipes that have been tried and true!
My favorite is the country vegan corn chowder. Click on the photo of corn chowder at right!
The adventure continues!
